In a corner of the Caribbean coast, far from the hustle and bustle of Mexico City, chef Edgar Núñez has created a gastronomic refuge where memory and innovation meet in balance. His restaurant, María Dolores, located within the ATELIER Playa Mujeres® resort, is much more than a culinary experience: it is a statement of principles.

Núñez, a chef trained both in international haute cuisine houses and in the traditional kitchens of his country, has developed a particular view of Mexican cuisine. Far from clichés, his cuisine is based on the land, conscious cultivation and respect for the ingredients, and then reinterprets them with technical precision and contemporary sensibility.

At María Dolores, local flavors acquire another dimension. There is no stridency or artif ice. Each dish reveals a deep exploration of textures, time and seasonality. The result is a refined cuisine, with its own language, where the products of the sea, the vegetables of the southeast and the aromas of the region are assembled with balance and character.

Among the most memorable dishes are the lamb sopes with recado negro, a reinterpretation of a Yucatecan recipe with power and elegance; the roasted beet taco with cashew nut cream, which confirms that vegetables can have as much prominence as a protein.

The desserts also speak for themselves: the hoja santa ice cream with cocoa ground and crystallized lemon is fresh, herbal, with a texture reminiscent of tropical gardens. And for pairing, a selection of wines with a strong presence of Mexican labels and a creative cocktail bar based on national distillates.

The restaurant has been distinguished by multiple organizations for its level of execution, its unique proposal and the complete experience it offers. The attention to detail, the harmony of the environment and a carefully selected wine list -that bets on national labels with identity- complement a gustatory journey that captivates travelers from all over the world.

Instead of replicating formulas, Núñez proposes a personal path. Her cuisine does not seek to dazzle, but to thrill. María Dolores thus becomes a space where Mexican haute cuisine. A place where cooking is thought, worked with expert hands, and of fered as an act of generosity and conscience
